Abstract

|
A bacterium (188-1) which produces a high level of intracellular inulinase was isolated from soil and identified as a strain of Bacillus sphaericus upon investigation of the morphological and physiological characteristics. Synthesis of inulinase by B. sphaericus 188-1 was mainly induced by inulin and an optimal medium for the enzyme production was established as 0.5% inulin, 0.4% peptone, and 10 mM MgSO©þ¡¤7H©üO (pH 7.5). The production of inulinase reached the highest level of 286 unit per §· protein after 10 hr cultivation by 7 L fermentor at 30¡É.
